latest from our owner, Brice [april update]:
things have gone pretty smooth thus far! we received our keys on april 1st and that same morning had painters, cleaners, and movers hustling to get us open. our friends at Coffee Physics got our Linea EE up and running, though unfortunately there was a mis-step and we had a chrome version delivered instead of our custom powered white…it happens, and the new panels are coming soon thanks to our friends at La Marzocco. yes, we did go with all manual equipment…we wanted to go back the artistry required to make good spro, and so yes, things will move a little slower than the average bar. we did work on flow and moved in on friday, kind rushed, but that is what the “soft open” is for…nothing can prepare you for the real thing.
we held and family a friends day on april 5th, and that was fun for all involved. then finally we opened the doors on monday, april 7th and gave away free drinks until noon…and wow…everyone was so kind and supportive!
this is something new and something different than what seattle currently has in its coffee scene, and though we know many will be disappointed that we do not have drip coffee or larger sizes or mocha or even cream and sugar, that is okay…basically, nothing is over 300g and we believe this is about taste, not consumption; enjoyment, not nourishment, fun and creativity, not survival.
